Cream of Celery & Coconut Soup

I love to make soup, it’s super easy and a great way to use up stockpiles of veggies. I had a surplus of celery today and all I could think to do with it was to make soup.

I have never made cream of celery soup, come to think of it I don’t know that I’ve ever tasted it until today either! This one is a winner, uber tasty and chocked full of Vitamin K (which apparently is good for our blood) as well as lot’s of fibre. Let me know what you think.

Ingredients
  1. 6 stalks of celery
  2. 1 brown onion
  3. 2 cloves garlic
  4. 1/4 cup olive oil
  5. 1/4 cup coconut flour
  6. 1 tin coconut milk
  7. 1.5 cups stock
  8. Sea salt flakes
  9. Freshly ground pepper
Instructions
  1. Finely chop the celery, onion & garlic
  2. Heat olive oil in stock pot
  3. Transfer celery, onion & garlic to stock pot and cook until transparent (around 4 minutes)
  4. Add flour and cook for one minute, stirring
  5. Add coconut milk and stock, simmer for around 15 minutes - stir occasionally to prevent burning
  6. Season with salt and pepper and blend until smooth
  7. Enjoy!
Notes
  1. I've been a fan of Massel stock cubes for years, for this recipe I used 1 chicken flavor stock cube with 1.5 cups of water
  2. Use more coconut flour to thicken as desired
